Chef Francisco Ruiz’s cuisine is characterised by traditional, artisanal cooking methods, using organic, locally sourced and seasonal produce – everything that Colunga has to offer, which includes almost everything from pulses to fish, and from seafood to game and free-range poultry. Traditional Asturian recipes with influences from the Indies.
