Madrid Fusión 2023: the world’s leading gastronomic event

One of the world’s most influential culinary conferences is back.

The Madrid Fusión food festival in Spain will hold its 21st edition under the slogan “Sin límites. No limits”, once again welcoming some of the most renowned chefs on the international scene.

The conference will examine the current state of global gastronomy, emerging new concepts and its multicultural nature, as well as the challenges facing the sector today. This year’s event will focus in particular on the world of haute cuisine without borders.

Dates and venue of Madrid Fusión

The Madrid Fusión conference will take place at the IFEMA exhibition centre in Madrid on 23, 24 and 25 January, featuring several stages, a main auditorium and a large exhibition area in Hall 14 of the venue.

Madrid Fusión 2023 Programme

As in previous years, the main aim of Madrid Fusión 2023 will be to explore new trends and give some of the finest professionals in the international culinary world the opportunity to share their expertise.

The main highlights of this edition will be remote restaurants – establishments located in hard-to-reach places such as Koks (Faroe Islands) and Proyecto Mil (Peru) – urban kitchens such as Kitchen Table (United Kingdom), and cuisine based on river fish, such as that served at Taberna Ó Balcão (Portugal) and Teru Sushi (Japan).

The main stage will host talks by world-renowned chefs, such as the Italian Massimiliano Alajmo from the restaurant Le Calandre, who became the youngest chef ever to be awarded three Michelin stars at the age of 28.

As part of the Madrid Fusión programme, The Wine Edition will take place, featuring a wine tasting room, as well as various competitions such as the Best Iberian Ham Croquette, Cooking with Mojos, Best Beer, Restaurant Bread and Signature Sandwich competitions. The Sustainability and Innovation Award will also be presented, along with the 2023 Rising Star Chef and 2023 Rising Star Pastry Chef awards, which recognise new talent in the sector.

Key speakers at the conference

This year, some of the world’s most renowned chefs will be visiting IFEMA for Madrid Fusión. Chefs Virgilio Martínez and Pía León will be sharing their expertise from Peru, whilst sushi master Takayoshi Watanabe will be joining from Japan. Also attending the congress will be Poul Andrias, a chef from the Faroe Islands, Italy’s Massimiliano Alajmo, and Spain’s Dabiz Muñoz, who has been awarded three Michelin stars for his restaurant DiverXO.

You can attend Madrid Fusión 2023 with various types of ticket, which you can purchase on the event’s official website. To attend in person, there are two types of pass:

The ticket includes access to the auditorium, the exhibition area and the multi-purpose stage, as well as the Wine Edition and a workshop (subject to prior registration).
